Happy Chanukah!

Okay, I know, it’s the second night, I’m late, yadda yadda. It’s been a rough week! (I feel like I’ve been saying that a lot – time to for the quarter to be over? I think yes.)

I don’t even want to talk about today. It was positively miserable and generally disappointing. Worst of all, I’m disappointed in myself for holding so much stock in what people think of me. 30% will always love you, 30% will probably hate you and 30% won’t care either way. The remaining 10% – axe murderers and sociopaths.

The only (okay, major) upside to this whole incident was the untimely creation of Butternut Squash and Sage Latkes and oh man, are they delicious! I have to say, I’m not a huge latke fan. I know this is practically blasphemy, but as much as I love fried foods + potatoes, latkes just never did it for me – until now. Admittedly, these are potato-free, but they’re just delicious. For those of you who are skeptical of butternut squash (usually on my blacklist), just give it a try: it’s like the perfect combination between Russet and sweet potatoes. Convinced yet?

Today, I baked: granola, marshmallow bars, spaghetti squash, and fresh chicken stock. Now, first, you have to understand that I don’t like marshmallow rice crispy bars: they’re sticky and so sweet they make my throat burn and a total inconvenience, especially because Kellogg’s ‘Rice Krispies’ are not gluten free (they contain barley malt) so I use Erewhon’s Crispy Brown Rice (Original) cereal, which is slightly healthier (right?) and just as delicious. Anyway, all of that being said, these Browned butter and sea salt marshmallow rice square…bar… things… are unbelievably, decadently (I would argue disturbingly) delicious.

I also did some research for my term paper, went to Costco, Trader Joe’s, Whole Foods and QFC to pick up various groceries, etc. Watched the first four episodes of Weeds, Season 5. My back is getting worse, I think; I’m stiff and kind of sore from my neck down to my hips, and my left hip pulses down to my knee, but my neck itself seems mostly ok… I don’t know. It’s worse than yesterday, and my chest is tight (like I’ve had the flu for a week or something heavy fell on my chest) it doesn’t make it hard to breathe, but it isn’t comfortable when the muscles stretch. Ugh.

Okay, maybe not THE most exciting photograph ever but it is pretty delicious! Erm, the content, not the photo…

Anyway, a certain someone has been keeping me up on video calls until all hours of the night recently (AHEM) and while I love it, I’m also bloody exhausted and seriously need to catch up on some shut eye… The fundamental problem is that we have established this unhealthy pattern over a period of more than five weeks — and it hasn’t been an issue up until this point because my classes hadn’t started yet – ugh.

In any case, pictured above and over here are my famous (hopefully?) garbanzo beans. It’s super easy and one of my favorite late night snacks!
