This is one of my favorite late night (or any time, really) snacks and it’s super easy – and moderately healthy…
Time involved: 25 minutes
1 standard-sized can of garbanzo beans/chickpeas (or “hummus beans” as my old camp counselor used to call them)
Assorted spices: paprika, garlic powder, salt, pepper, oregano, cayenne pepper or pepper flakes, etc.
Olive oil (preferably a spray)
What to do
Preheat your oven to 400 F. Line a baking sheet with aluminum foil or parchment (or silpat, I guess). Drain garbanzo beans and pour onto baking sheet, in a single layer… If they look pretty wet, consider patting lightly with a paper towel, otherwise they won’t crisp up!
Either lightly spray or very carefully drizzle olive oil to cover beans. Sprinkle generously with spices: my favorite mix is paprika, garlic powder, oregano and a dash of cayenne. Bake for 15-25 minutes or until the beans are desirably crisp (I like my really crisp, so I go the full 25 minutes). Let cool and enjoy!
